In an effort to increase access to fresh, local produce and more comprehensive nutrition education to underserved residents, the Goshen Market Foundation, in partnership with students and faculty from SIUE, hit the road in August 2018 with the Beet Box. The Beet Box is a mobile farmers market stocked with affordably priced, local produce. It visits neighborhoods, schools, and community centers in our region that are currently lacking access to fresh produce as a result of transportation limitations, health issues, or food-desert conditions.
In coordination with the University of Illinois Extension, the Beet Box gives out recipes using in season local produce. The Beet Box is also now a registered traveling Little Free Library, and with the help of the Metro East Rotary and SIUE’s Diversity Day Committee we give out kids’ books about healthy eating and global food culture.
